How do I disable the ability for customers to purchase on my store and make it "browse only"?

You can set your store to Catalog Mode which will make your store items viewable or able to be browsed however not purchasable.

To change from Store Mode to Catalog Mode, go to the Settings menu in your admin panel. Select Store Settings and go to Store Front Settings from the menu on left side. Change from Store Mode to Catalog Mode from the drop menu and click Save at bottom of screen.
