I was wondering if it is possible to host my email accounts outside Ashop? We have purchased a mail exchange server which we planned to be our mail server.

Yes, you can host your emails externally.
When adding your domain name in your store admin area under Settings > Domain Names, there is a check box for 'Use External Mail Server' which you need to tick. You will then provided a field to enter your mail server's MX record.
